Spray microwave safe bowl (the size of a cereal/salad bowl) with cooking spray.
Add all wet ingredients (oil, egg, milk, peanut butter, honey) to the bowl and whisk together until smooth. TIP: measure your oil before measuring your peanut butter. Your peanut butter will slide out of the measuring spoon easier. Add dry ingredients (almond flour, baking powder, salt) and whisk until combined.
Microwave for 90 seconds.
Serve warm with chocolate chips. You can also top with sliced strawberries.
