Chicken Veggie Bites

Ingredients

  • 1 lb ground chicken
  • 2 cloves garlic, minced
  • 2 cups broccoli florets (bite sized florets)
  • 1 cup matchstick carrots
  • 1 1/2 tsp dried basil
  • 1 tsp salt
  • 1 tsp dried parsley
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 egg

Instructions

  • Preheat oven to 400°. Line a baking sheet with aluminum foil and lightly grease the foil.
  • In a food processor, add minced garlic, broccoli, and carrots and pulse until all veggies look as if they've been finely chopped.
  • In a bowl, pour your veggie mixture and add all remaining ingredients except for the ground chicken. Mix until combined.
  • Next, fold together your ground chicken and veggie mixture.
  • Using a small cookie scoop (or a tablespoon), scoop your mixture and place on the lined, greased baking sheet. This will make about 40 small bite-sized nuggets.
  • Bake for 20-25 minutes or until cooked through completely.
