Preheat oven to 400°. Line a baking sheet with aluminum foil and lightly grease the foil.
In a food processor, add minced garlic, broccoli, and carrots and pulse until all veggies look as if they've been finely chopped.
In a bowl, pour your veggie mixture and add all remaining ingredients except for the ground chicken. Mix until combined.
Next, fold together your ground chicken and veggie mixture.
Using a small cookie scoop (or a tablespoon), scoop your mixture and place on the lined, greased baking sheet. This will make about 40 small bite-sized nuggets.
Bake for 20-25 minutes or until cooked through completely.
