A perfect delicious, cakey bread that is perfect for dessert or breakfast! There’s even a recipe for an easy “yogurt frosting.” Yum!
Strawberry Banana Bread (Gluten Free)
Ingredients
- 1 1/2 cup flour (gluten free)
- 3 ripe bananas
- 1 egg
- 2 tbsp coconut sugar
- 1 tbsp cinnamon
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp nutmeg
- 1 pinch of salt
- 1 cup chopped strawberries
Healthy Yogurt Topping
- 1/2 cup plain whole milk Greek yogurt
- 1/2 cup finely diced strawberries
- 2 tbsp honey
Instructions
- Preheat oven to 350° and grease an 8×8 baking pan.
- Pulse all ingredients in food processor, EXCEPT your strawberries.
- Once the ingredients have formed a smooth batter, fold in strawberries.
- Pour batter into baking pan and bake for 26-28 minutes, until cooked through.
Healthy Yogurt Topping
- Mix together all yogurt topping ingredients and top individual bread squares as you are ready to serve.
