This sweet treat has just a touch of salty, the perfect unique sweetness from the honey, and of course just the right amount of crunch and nuttiness from the pistachios.
Salted Honey Pistachio Ice Cream
Equipment
- Stand mixer (or handheld mixer)
Ingredients
- 14 oz sweetened condensed milk
- 2 1/2 cups heavy whipping cream
- 1 cup pistachios (shells removed)
- 1 tsp cinnamon
- 1 1/4 tsp almond extract
- 1/4 cup honey
- 1/2 tsp coarse sea salt
Instructions
- Using the whisk attachment on your stand mixer, add the sweetened condensed milk, heavy whipping cream, cinnamon, and almond extract to your mixing bowl.
- Starting at a low speed, whisk ingredients together, slowly increasing to high speed until the mixture reaches a loose whipped cream consistency (medium-stiff peaks).
- Chop pistachios, then fold into your mixture.
- Combine the honey and sea salt, then gently fold into the mixture.
- Pour the mixture into a large tupperware container and place in the freezer to set for at least 7 hours before serving (preferably leave in the freezer overnight). OPTIONAL: Drizzle some additional salted honey over the mixture before placing in the freezer to set.
