Quick Cast Iron Apple Crumble

Cast iron skillets are pretty much the best thing since [gluten free] sliced bread. If you don’t have one, I highly suggest going out right this second and buying one, it will become your new best friend in the kitchen, guaranteed!

We have a small 6” skillet that we like to use mostly for quick and easy desserts, like this apple crumble. We also have a 12” skillet that we received as a wedding gift from my cousin, and we use it pretty much every chance we get. Cast iron skillets are durable, easy to clean, and super versatile – you can use them on the stovetop, in the oven, on the grill, or even on an open fire. I could go on and on about my love for this thing… but I’ll just trust that those of you who didn’t already have one are now thoroughly convinced that cast iron skillets are a must-have and I can now feel comfortable moving on to the recipe!

 

Ingredients

Apple Filling:

  • 2 small gala apples, peeled + chopped into 1” cubes
  • 1 ½ tbsp cinnamon
  • 1 tsp brown sugar
  • ⅓ cup coconut milk
  • Drizzle of honey, or maple syrup

Ingredients

Crumble Topping:

  • 1 tsp brown sugar
  • ⅓ cup gluten free quick oats
  • 2 tbsp butter, unsalted
  • 1 tsp cinnamon

Directions

  1. Preheat oven to 375°.
  2. Combine all apple filling ingredients in a small bowl, then transfer to a well-buttered cast iron skillet.
  3. Place the skillet in the oven to bake for about 20 minutes.
  4. While the apple filling is in the oven, combine all crumble topping ingredients in a microwave-safe bowl and microwave in 20 second increments, mixing in between each round until all ingredients are well incorporated.
  5. Once the apple filling has baked for 20 minutes, remove from the oven, add crumble topping, and place back in the oven to bake for another 7 minutes.
  6. Serve warm [great with cool whip or vanilla ice cream!].
