Mint and chocolate—mmm! This pudding is a great on-the-go breakfast option or a yummy, healthy dessert option. Not to mention, chia pudding is the easiest pudding you can make!

You won’t even need to stir the ingredients. Just place all your ingredients in a jar, close the lid tightly, shake it, and refrigerate it for later!

Serving this pudding as a dessert? Top with fluffy homemade whipped cream and some chocolate shavings or chopped Andes mints!

Mint Chocolate Chia Pudding

Ingredients
- 1/2 cup almond milk (or milk of your choice)
- 2 tbsp chia seeds
- 1 tbsp cocoa powder
- 1/4 tsp peppermint or mint extract
- 1 tsp honey (or sweetener of choice: sugar, agave)
Optional
- 1 tbsp mini semisweet chocolate chips
Instructions
- Add all ingredients in a mason jar.
- Put the lid on your jar and shake until all ingredients are combined.
- Refrigerate overnight (or for at least 5 hours). Once the chia seeds have soaked up the milk and flavors, you can enjoy!
