Italian Skillet Sausage, Peppers + Potatoes

A few years ago my parents discovered this sausage, peppers + [gluten free] pasta dish and it is seriously one of my FAVORITES. So, you may be wondering… why change it up then? Why fix what ain’t broke? Relax, relax… I’m not trying to “fix” the dish [‘cause trust me, that dish is nothing short of perfection], I’m just trying to change it up a bit. There’s nothing wrong with a little variety!

The concept of this dish is completely inspired by my parents’ recipe, with just a minor swap of a few ingredients. For my version of this recipe, I’ve traded in my gluten free pasta for some hearty sweet potatoes… an easy swap for something a bit more nutritious.

This meal is also great for leftovers, so make extra and you’ve got a few meals covered in one evening of cooking.

Ingredients

  • 3 medium sweet potatoes, peeled + cut into 1 inch cubes
  • 3 bell peppers, sliced
  • 2 cloves garlic, minced
  • 1 medium yellow onion, sliced
  • 2 tbsp white cooking wine
  • 1.25 lb Italian turkey sausage links*
  • Garnish: shredded parmesan + fresh basil

Directions

  1. In a large pot, bring lightly salted water to a low boil, then add sweet potatoes.
  2. Allow sweet potatoes to cook on a low boil for about 8 to 10 minutes, or until just tender. Do not overcook or potatoes will become mushy.
  3. Strain the potatoes and season with salt and pepper.
  4. Cut sausage links into smaller pieces, similar to the size of the cubed potatoes.
  5. In a separate pan (a cast iron skillet works great), add a few tablespoons of olive oil, bring to medium heat + add sausage.
  6. Once sausage has browned and cooked most of the way through, lower the heat slightly.
  7. Add garlic and onion and sauté for a few minutes.
  8. Add peppers, white wine + pinch of black pepper and sauté for a few more minutes. Peppers should be more tender, but still slightly crisp.
  9. Gently fold in potatoes, careful not to mush them.
  10. Garnish with shredded parmesan, fresh basil + salt and pepper, to taste.

*I used Shady Brook Farms brand of Italian turkey sausage links, found at Giant. These sausage links are gluten free.
