Gluten Free Microwave Peanut Butter Cake

When you’re looking for an easy, cakey dessert, but don’t want to turn on the oven. This single serve, gluten free microwave peanut butter cake is your answer! And it takes only 90 seconds to bake in the microwave.

This fluffy cake is gluten free, made with almond flour. It has a subtle peanut butter flavor, just the right touch of sweetness, and just as important: very little cleanup!

Serve this cake warm with chocolate chips and even some sliced strawberries or sliced banana. Soo yummy!

Gluten Free Microwave Peanut Butter Cake

Ingredients

  • 1 tbsp melted coconut oil
  • 1 egg
  • 1 tbsp almond milk (or milk of choice)
  • 2 tbsp creamy natural peanut butter
  • 1 tsp honey
  • 4 tbsp almond flour
  • 1/4 tsp baking powder
  • 1 pinch of salt

Instructions

  • Spray microwave safe bowl (the size of a cereal/salad bowl) with cooking spray.
  • Add all wet ingredients (oil, egg, milk, peanut butter, honey) to the bowl and whisk together until smooth.
    TIP: measure your oil before measuring your peanut butter. Your peanut butter will slide out of the measuring spoon easier.
  • Add dry ingredients (almond flour, baking powder, salt) and whisk until combined.
  • Microwave for 90 seconds.
  • Serve warm with chocolate chips. You can also top with sliced strawberries.
