Gingerbread Date Balls

‘Tis the season for all the gingerbread treats! I love all the warm spices that go into making gingerbread cookies, and wanted to come up with an alternate sweet that brought all those warm, holiday spices together, without ever turning on the oven.

These dates balls all the yummy flavor you get in a soft gingerbread cookie, minus the butter and flour. Such a great alternative!

It may sound weird, but sometimes I store these treats in the freezer, and they are SO delicious when they are cold and slightly frozen—yum!

Gingerbread Date Balls

Servings 18 balls

Ingredients

  • 1 1/2 cups pitted dates (about 30 dates)
  • 1/2 cup lightly salted or unsalted cashews
  • 2 tbsp almond butter
  • 2 tsp molasses
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves

Instructions

  • Place all ingredients in the food processor and pulse until it reaches a dough-like consistency.
  • Scoop and roll into balls (makes about 18 balls – 1 tbsp each).
  • Store in fridge or freezer.
