My creamy cauliflower mash is hearty, filling, and super versatile. Part of its creaminess comes from the addition of cottage cheese. If you’re not a huge fan of cottage cheese, don’t be too quick to cross this one off your list! You’ll never know cottage cheese is in this recipe, and once it’s all blended up and creamy and delicious, you definitely won’t care! This mash is the perfect base to lay a heaping pile of grilled veggies or protein.
So, with just a short list of ingredients and super easy prep, this cauliflower mash is a great addition to weeknight dinners.
Wanna switch up the flavors? Try mixing up the recipe by using different flavor-infused olive oils! Or think about serving with a variety of fresh herbs [basil, chives, cilantro – whatever pairs well with your dinner that night!].
