It seems like there are so many granola bar options out there. But somehow it still feels so hard to find options that are lower in sugar or that don’t have added refined sugar. If you’re like me, you like to save those sugar moments for the real desserts. Because of that, I’m always looking for easy homemade recipes to satisfy my hunger in a healthier way. These cranberry granola bites are hearty, healthy, and have just the right pop of sweetness, thanks to the dried cranberries. They’re a great alternative to store bought granola bars and will help push off that morning or after work [or school] growling stomach.
Not a fan of dried cranberries? Try other dried fruits. Some chopped dried mango or pineapple would be such a yummy combo with the shredded coconut! Helpful hint: Trader Joe’s has good dried fruit options without the added sugar.
Cranberry Granola Bites
Ingredients
- 1 cup rolled oats, gluten free
- 1/2 cup unsweetened coconut flakes
- 1/2 cup dried cranberries
- 1/4 cup roasted pepitas
- 1/8 cup honey
- 1/2 cup unsweetened/natural applesauce
- 1 egg + 1 egg white
- 2 tsps coconut oil, melted
- 1/2 tsp vanilla extract
- 1 tsp ground cinnamon
- 1 pinch salt
Instructions
- Preheat oven to 350° and grease muffin pan.
- Mix together honey, applesauce, eggs, coconut oil, and vanilla extract until well combined. Then stir in all remaining ingredients.
- Evenly spoon batter into muffin pan. The batter should make about 10 muffins, each filled about halfway.
- Pack down the mixture of each muffin using the back of your spoon or the bottom of a measuring cup.
- Bake for 18-20 minutes. The muffins should be a golden brown around the edges.
- Allow for cooling time before carefully removing from the pan.
