This is a cute and easy holiday twist on the oh-so-classic rice krispie treat. Easy to make, no oven required, and kid-friendly! And who knew donut pans could be used for something like this?!
If you are following a gluten free diet, you may or may not be surprised when I tell you that most rice krispie treats and rice krispie cereals contain malt flavoring, making them not gluten free. Another reason why it is so important to read the ingredients carefully when you or someone you know has an allergy, things aren’t always what they seem! I’ve found a few stores that do carry a gluten free version at a reasonable price – one of them being Wegmans. Because I don’t live close to a Wegmans, I’ve gone with an alternative ingredient – rice squares cereal, or Chex cereal – tastes just as good and helps avoid an unnecessarily long trek and search at the grocery store.
If you don’t own a mini donut pan, I highly suggest getting one – just think of all the fun donut flavors you could try – and all the new friends you could make. January Whole30? Dieting starts when the new year hits? Fine then, use the mini donut pan to make those healthy egg muffin recipes of yours in the meantime … now there’s an idea!
Christmas Wreath Marshmallow Cereal Treats
Ingredients
- 4 tbsp butter, unsalted
- 10.5 oz mini marshmallows
- 2 drops green food dye
- 6 cups Chex rice cereal
- red sprinkles, red icing, other edible decorations
Instructions
- Melt butter on low heat in a large pan, then add marshmallows.
- Stir marshmallows and butter over low heat until all of the marshmallows have melted completely, then mix in the green food dye and remove from the heat.
- Combine your rice cereal with the melted marshmallows. I used my hands to lightly crush some of the cereal squares as I added to marshmallows – this will help the mixture form its shape a little easier.
- Once all of the cereal has been coated in your green melted marshmallow, press your mixture into your very lightly greased mini donut pan to form the wreath shape.
- Allow the wreath shapes to cool enough that they are able to hold their shape before removing from the pan and placing on wax paper to decorate. You will want to work as quickly as possible to to shape each round of wreaths without allowing the remaining mixture time to cool completely.
- Once all wreaths have been formed, you can use your icing and sprinkles to decorate however you wish! [Clearly I ran out of time to decorate all of my wreaths – you win some, you lose some.]
