These chicken and veggie nuggets, meatballs, bites… whatever you want to call them… are packed with protein, veggies, garlic, and herbs. They are perfect to top your salads, mix into saucy pastas, or dip with your favorite condiments.
I love making these yummy bites in large batches. They’re a perfect freezer staple. Double your batch when you make these and pop the extras in the freezer for when you’re in a pinch. When you’re ready to eat, just throw the frozen nuggets into the microwave to heat up and they’ll be ready to go in just a few minutes! Who doesn’t love easy dinners when life gets hectic?!
Chicken Veggie Bites
Ingredients
- 1 lb ground chicken
- 2 cloves garlic, minced
- 2 cups broccoli florets (bite sized florets)
- 1 cup matchstick carrots
- 1 1/2 tsp dried basil
- 1 tsp salt
- 1 tsp dried parsley
- 1 tsp onion powder
- 1/2 tsp garlic powder
- 1 egg
Instructions
- Preheat oven to 400°. Line a baking sheet with aluminum foil and lightly grease the foil.
- In a food processor, add minced garlic, broccoli, and carrots and pulse until all veggies look as if they've been finely chopped.
- In a bowl, pour your veggie mixture and add all remaining ingredients except for the ground chicken. Mix until combined.
- Next, fold together your ground chicken and veggie mixture.
- Using a small cookie scoop (or a tablespoon), scoop your mixture and place on the lined, greased baking sheet. This will make about 40 small bite-sized nuggets.
- Bake for 20-25 minutes or until cooked through completely.
