Baked Blueberry Date Bars

These baked blueberry date bars could not be easier. I love any and all recipes that simply require a quick whirl in the food processor – the lazy baker’s dream. 🙂 And that’s exactly what this recipe asks of you. Just a quick spin in the food processor, pop it in the oven, and you’re done! Easy peasy.

Ever buy big batches of berries and by the time you get down to the last handful, they’re not as firm and maybe even a little smooshy? Not ideal for fresh snacking. That’s when having recipes like this on hand are PERFECT! Doesn’t matter how smooshy and ugly they are, throw them into this batter and keep those blueberries go to waste!

The recipe calls for sunflower seed butter, but you can also use creamy almond butter. Any natural nut butter will do, so just use what you have on hand! Here are the pitted dates that I used.

Baked Blueberry Date Bars

Ingredients

  • 25 pitted dates
  • 3/4 cup blueberries
  • 2 tbsp sunflower seed butter (or any natural nut butter)
  • 1/4 cup egg whites (or about 2 large egg whites)
  • 3/4 cup oats, gluten free (or regular if not following GF diet)
  • Pinch of salt

Instructions

  • Preheat oven to 350°.
  • Line a 9×9 baking pan with parchment paper and set aside.
  • Add all ingredients to food processor and blend until all blueberries have broken down and ingredients have been incorporated into a batter. The batter won't be super smooth.
  • Pour batter into lined baking pan and spread with rubber spatula.
  • Bake for 20 minutes. Allow the bake to cool completely before cutting into bars.
  • Store in fridge.
